National Barbecue Week is from 27th May to 2nd June 2013 and at Q Lawns, Enviromat and Meadowmat, staff are celebrating by sharing our favourite honey recipes.

Everybody at Meadowmat enjoys a good barbecue and because we spend so much time on foot, working around wild flowers and noticing what's happening in the countryside, we can appreciate how much work the bees have to do to make just a small amount of honey.  

This recipe comes from Cheryl and we're hoping that Meadowmat Production Manager, Robert Allen (a keen fisherman) will nip out and catch us a few mackerel so that we can fire up the barbie and tuck in.

 

Marinated Mackerel

As well as being tasty, and very easy to cook on a barbecue, Mackerel is a great source of Omega-3 fatty acids.  Serve with fresh bread and a crispy green salad.

For Four People

2 tablespoons clear honey
2 tablespoons white wine vinegar
1 tablespoon mild mustard
salt and pepper
4 large mackerel, cleaned (or 8 large mackerel fillets)
4 bay leaves

Mix the honey with the vinegar, mustard and plenty of seasoning.  If you have whole fish, cut off the heads remove their bones.

Lay the fish in a shallow dish and top with the bay leaves.  Pour over the marinade and cover with cling film, then place the dish in the fridge.

Leave the fish to marinate for several hours or overnight.

Cook the fish over a hot barbecue, basting frequently with the marinade until it is cooked through.*

Serve immediately

  • This would also work if the fish and marinade were wrapped in foil parcels and then the parcels were placed on the barbecue grill (or in the hot embers) until the fish were cooked through.  Just open the parcel and eat out of the foil.
